Rainbow Goodness:)

Has been a very busy day today! Woke up, meandered down stairs to feed the pup and kitties. Well, really just the pup and one kitty, Ace, the piglet. Bill had already let Miss Kitty out. Clicked on the coffee pot and plopped down at the puter to work on a new website for a local company. I don't like the design I came up with, but they love it and that's all that matters. I do like that I can work from home in my oh-so-not-very-becoming pa-jammies, but there are some draw backs to it. For starters, you live and work at the same place. So needless to say, the happy little cleaning fairy is not going to wave her sparkly little magic wand and go poof to make the daily mess go away. Nope, the grumpy cleaning troll with hair sticking haphazardly out of her pony tail and in her oh-not-so-very-becoming pa-jammies does this.

From here I have a list of things yet to do... Start a load of laundry, run the RODI-water so I can top off the fishie tank, run another 5 gallons of RODI water so that I can change the water in the fishie tank tomorrow, put up clean dishes so the washer can be reloaded after dinner, fix a salad for dinner, run to the post office, swing by the grocery to get something to go with the salad..... And this is where my little brain finally had a good idea.....

I remember seeing a site the other day where someone had made a 'Rainbow Cake'! Oh, it looked so darn fun and so bright and cheerful:) And lets face it, I really don't use the Kitchen-Aid mixer quite enough. Added a box of white cake, some gel food coloring (not liquid drops) and a pair of Wilton 9" cake pans.....

With my extra bits in tow, I rush home so I can fix Bill his BBQ chicken to go with the salad and get started on my cake following the white cake directions to a tee until it comes to pouring it in the pan. Instead I separate the batter into several bowls and mix each bowl with a different color or blend of food coloring gel. I then started plopping 1/2 of each color right on top of one another in the center of 9" cake pans. Then back to the cake directions for cooking:)

While it was cooking I whipped up some yummie if not a bit sugary cream cheese icing from a recipe I found online. I'm thanking my lucky stars I did a taste test after adding 2 cups of confectioners sugar to the butter and cream cheese blend. Pulled the cakes out of the oven and let them cool. Then I frosted and slapped it in the fridge so that I could go weed eat the yard, wash Miss Piper and take Miss Piper for a walk.

After my shower, I zipped down the stairs pulled out my pretty little cake and finally found how good a little slice of a rainbow can be at the end of your day:) But then again, one could also call this the true 'End of the Rainbow'!

The End of the Rainbow
